Living the Bay Area provides a great backdrop to learn about many different cultures and also their foods. Asian cooking in the Bay Area is a serious endeavor and this class will focus on several Stir Fry dishes that show cases the many techniques possible with a Wok. We will discuss the best types to buy and proper wok maintenance.
Fried Rice is a quintessential dish, that is really a vehicle for using left over ingredients. We’ll discuss what you’ll need to make this dish correctly and have it bursting with flavor.
Twice Cooked Pork – This recipes is derived from the famous restaurant Chef Chu’s in Los Altos. We’ll discuss which cuts of meat to use and why cooking it twice yields such great results.
Cashew Chicken can be cooked in a flash and you’ll perfect your knife skill with the ingredient prep.
Mapo Tofu – Tofu is such a great source of protein and comes in wide variety of textures. This classic Hunan dish is very spicy and loaded with other spices from the Hot Bean Sauce. You will need a delicate touch to make sure it doesn’t break into tiny pieces.
Beef Chow Fun is a comfort food that is super easy to make if you know the right technique. The noodles are vital in this dish and there are many iterations of this in various Asian cultures.
Spicy Eggplant – This dish has ground pork in it which you can omit to make it vegetarian easily. Like most Chinese dishes, this dish takes a fair amount of prep work then comes together very quickly in the wok.
