Visits to Chinatown triggers memories as a youth that still compose a tapestry of senses firing a beautiful symphony of memories. This class will teach you how to make classic dishes common to the store front windows loaded with steam tables and hanging meats. Dougie Chef leads this class.
Char Shui – My mothers secret recipe. As a child, our family business was making Bao (steamed buns) and my mother made the best char shui.
Roast Pork – Crunchy skin, juicy meat and salty deliciousness.
Chow Mein – Noodles are a national dish with many variations. The standard fare in the deli window offers a quick snack at afforable prices.
Lotus Leaf Wrapped Sticky Rice – Glutenous rice gets an infusion of flavor from wearing a Lotus Leaf jacket and getting better with steam.
Braised Tofu and Pork – This dish is so universal, its easy to substitute ingredients for your own palate. Technique will certainly be universal.
Class begins at 10am and ends at 1pm.
