On a recent trip to Indonesia, Chef Doug Eng was hosted by his wife’s family who introduced the local cuisine which is wrought with influences of the many cultures that surround the volcanic islands. With a keen palate and deep interest, ITK Culinary very pleased into bring the flavors of Indonesia.
Balinese Chicken (Ayam Pelalah) – The classic dish of shredded chicken with the many herbs
Sate Lilit Bali – Fish paste and shrimp skewers with spicy dipping sauce. Likely the first time you have used fish paste. The flavors are just amazing.
Nasi Goreng – The classic fried rice dish of Indonesia is made unique by the inclusion of ground shrimp paste. Left out, its standard fried rice. Included, its magical.
Gado Gado – This rich salad is the perfect recipes for those who don’t like recipes since its based on your palate and what you have on hand.
Soto Betawi – This dish is native to Jakarta and again, draws from the multitude of ingredients available in the tropics. Normally served with pickles and rice, its a meal within itself.
Klappertaart – A fusion dish that enjoys some techniques from the new world using coconut milk, flesh and juice to make a tart.
Please note that the flavor and spices from Southeast Asia are very pronounced. Be prepared to experience the unique combinations of salty, sweet, hot and sour.
Cost is $125. Class begins at 5pm and lasts approximately 3 hours.
